  • Cladogenesis—evolutionary change by the branching off of new species from common ancestral types—is a collaboration with Inoculum Ale Works. We brewed 15bbl of simple Saison wort (unfermented beer) with 100% Pilsen malt and transferred half of it into Inoculum’s stainless tote, which they drove back to their brewery. We each fermented our respective half-batches in stainless and oak, pitching the same Saison yeast but inoculating with our own distinct mixed cultures to highlight and compare the effects of our disparate bacteria cultures. This is our stainless-fermented batch; it’s bursting with ripe green apple aromas and a slight Brett character, with crisp, tart apple & lemon flavors, subtle undercurrents of earthy funk and a fairly dry white pepper finish from the Saison yeast.
  • Old Ale—based on a 60 year-old recipe dredged up from the caliginous depths of Dorchester’s storied Eldridge Pope brewery—aged in bourbon barrels. Bourbon-laden vanilla aromas, oak-forward flavors steeped in toffee and cherry mingle with notes of mulling spices & rich caramel that finish clean in this copper-colored ale.   • Fermentis Camino is an American Wild Ale spontaneously inoculated in our Brewer’s ’84 El Camino Conquista’s truck bed-turned-coolship, capturing native microflora beneath the oak trees in our Beer Garden and then spontaneously fermented & matured in select oak barrels.
  • Our first mixed culture release and a preview of things to come from our burgeoning wild program. La Couronne Sauvage (“The Wild Crown”) was inspired by centuries-old Belgian lambic brewing traditions. Aged in oak barrels for six months, a mixed culture of yeast & souring bacteria infuses this straw-gold American Wild Ale with a lactic acidity that finishes clean, while nuanced aromas & flavors reminiscent of tart nectarine, tangerine, and pear weave serpentine through subtle undercurrents of funk. Packaged July 12th, 2018 in corked & capped bottles.
  • Order includes series of 5 Stickers (4 of Salvador's Wit and 1 Rhinocerotic). Salvador's Wit labels feature four designs, each highlighting Salvador Dali’s masterworks at the Museum. The labels come to life via an Augmented Reality (AR) feature available on The Dalí Museum App.
  • Farmhouse Ale with Brettanomyces aged in tequila barrels we brewed with our friends Mastry’s Brewing Co.
    With sweet tangerine and black pepper notes on the nose alongside ample tequila aromas, tropical orange zest and peppery bitterness mingle with dry, oaky tequila-barrel flavors that linger throughout the finish. 7.2 ALC/VOL
  • Therianthropy—the mythological ability of humans to metamorphose into animals by means of shapeshifting (and vice versa)—is the next installment in our American Wild Ale series. Therianthropy is a Scottish-style ale brewed with Golden Promise malt and soured in oak barrels.
  • 2020 U.S. Beer Tasting Championship National Grand Champion, this Wee Heavy is dark brown with copper highlights and sweet, malt-forward caramel aromas and flavors coupled with roasted, dried dark fruit and muted bitterness.
     
    Eynhallow was barrel aged for 22 months in Siesta Key rum barrels imparting sherry like qualities, with vanilla and baking spices and an incredible cinnamon note rounded out with a manzanilla tea flavor.

  • A strikingly golden Gose brewed with saffron. This on-the-nose ale is inspired by Dalí’s belief that the rhino horn is a symbol of absolute perfection. The label has one design, created by our in-house Graphic Designer Eric Wolfe Sahlsten which features a Dalí-inspired rhino. Dalí was fascinated by spirals and the DNA molecule, and he considered the rhinoceros’ horn a perfect logarithmic spiral and a perfect form within nature. This was also the case with sunflowers—“in the intersection of the sunflower spirals there is evidently the perfect shape of the rhinoceros horn”. His painting Assumpta Corpuscularia Lapislazulina features a dialogue between God, the Son and multiple rhinoceros’ horns and Dalí believed the horn was a mystical, cosmic form and symbol of divine order and the creator. “The rhinoceros is the only animal that carries an incredible amount of cosmic knowledge within its armor.” – Salvador Dalí
